BUCKHORN INN'S PEANUT BUTTER PIE 
BOTTOM:

1/3 c. creamy peanut butter
3/4 c. powdered sugar
1 (9 inch) pie shell, baked

FILLING:

1/3 c. flour
1/2 c. sugar
1/8 tsp. salt
2 c. milk
2 egg yolks, slightly beaten
2 tsp. butter, melted
1 tsp. vanilla
Prepared whipped topping

For bottom, mix peanut butter and sugar together until crumbly and place on bottom of crust, saving 2 tablespoons to sprinkle on top.

For filling, mix first 5 ingredients together in a saucepan over high heat until mixture comes to a rolling boil. Stir until mixture reaches a thick consistency. Remove filling from heat and add melted butter and vanilla.

Pour over peanut butter mixture and cool. Spread with prepared whipped topping. Sprinkle with leftover peanut butter crumbles. Refrigerate. Yields: 1 pie.
