CREAM OF BROCCOLI SOUP 
2 tbsp. butter
1 onion, chopped
1 bunch broccoli, chopped
1 clove garlic, chopped
Water
1-2 tsp. curry powder
Salt and pepper, to taste
1 c. cream (for a rich soup)
OR 1 can evaporated skim milk (low cal)

Melt butter in pot. Add onion and curry powder and sauté until onion is tender and translucent. Add broccoli, garlic and water to barely cover the broccoli. Bring to a boil and cook until broccoli is tender but not overcooked. Save a floret of broccoli for each serving for garnish.

Puree soup in blender and add either cream or evaporated milk. Add salt and pepper to taste. Heat until steaming hot and serve garnished with reserved floret. Do no boil.

Unbelievably simple and good. I put in two teaspoons of curry, 'cause I love curry. Salt and pepper, one teaspoon each. Water, about 2.5 cups. Definitely a keeper.
