CRUSTLESS QUICHE
1 1/2 c. milk
3 eggs, slightly beaten
1/4 c. melted butter
1/8 tsp. each pepper and onion salt
1/2 c. Bisquick
2 c. shredded cheese
1 1/2 c. diced meat

Beat together the milk, eggs, butter, seasonings and Bisquick. Make sure mixture is smooth. Pour into an ungreased 9 inch pie plate or 9 inch square pan. Sprinkle cheese and meat over the top - press gently down. Bake at 350 degrees for 35 to 40 minutes.

GREAT RECIPE FOR VARIATION: You can use any kind of cheese and meat that you wish. Good combinations that we have used are: Swiss and ham, Swiss and bacon, Cheddar and ham, Swiss and crab, Swiss and lobster with VERY well drained chopped spinach and Cheddar and tuna.

The recipe can be doubled in a 9 x 13 inch pan. Use an extra egg and use only 1 cup of milk. You can make this ahead. Bake and store in the refrigerator. Then reheat it for 3 to 4 minutes in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I sautee onions, green bell peppers, mushrooms and add it with the ham. This is A HUGE favorite. I double the recipe, leaving out some of the liquids, primarily leaving off 1/2 cup of milk. It rocks! It does great pre-cooking it. I've been using this recipe for at least the last year.

Love this recipe. I double everything because it will not make enough for the teens. I use 1/2 cup less milk and a little less butter because I sautee onions, green bell peppers, and mushrooms to add with the meat and chees. Big favorite!

I sautéed thinly sliced onion and about 2 cups frozen spinach, used only 1 cup of milk. Cheese I had on hand, which didn't reach 2 cups, but added flavor with some Parmesan. Cooled, cut in wedges. Fabulous Superbowl snack. :-)
