BAKED CODFISH WITH LEMON | |
2 codfish fillets, 6 oz. each 1/8 tsp. salt Dash each white pepper & paprika 4 lemon slices 1 tbsp. sm. capers 2 tsp. chopped fresh parsley Preheat oven to 375 degrees. Spray flamerock baking pan, just large enough to hold fish in 1 layer, with Pam. Place fish in pan, sprinkle with salt, pepper and paprika. Top each fillet with 2 lemon slices and sprinkle with capers. Bake 8 to 10 minutes. Transfer to preheated broiler, broil for 3 minutes or until lemon is lightly browned at the edges. Sprinkle each with 1 teaspoon chopped parsley. Serves 2. Serve with 1 cup tossed salad. Single serving = 4 ounces protein, 1 cup salad. |
