HALIBUT BAKED WITH BREAD CRUMBS 
1 1/4 lbs. potatoes, sliced thinly (about 4 c.)
1 onion (about 1/3 lb.), sliced thinly
12 tbsp. butter
4 halibut or cod fillets, about 2 1/2 lbs.
Salt & pepper to taste
1/4 c. chopped parsley
1 clove garlic, minced
1/2 c. bread crumbs
1/2 c. dry white wine

Preheat oven to 425 degrees. Prepare potatoes and keep covered with cold water. Prepare the onion rings and set aside. Rub baking dish with 6 tablespoons butter. Fold each fillet over itself and arrange down center of baking dish. Sprinkle with salt and pepper. Drain potatoes and put in bowl. Add onions, parsley, garlic, salt and pepper to taste. Mix well. Arrange the vegetable mixture around the fillets. Dot with remaining butter. Sprinkle fish with bread crumbs. Add the wine. Bring dish to a boil on top of stove and place in oven. Bake 30 minutes. As the fish bakes, tilt the baking dish and spoon the liquid over the fish. 4 servings.

Made this for my foodie husband and he loved it-simple and tasty-did it with cod. Only change was I did a half recipe but did a little more than half the wine.

Instead of just butter, but along with, I added 1/4 cup sherry and a little salt, heavy whipping cream, heated on stove top, cooled slightly, dipped fish into mixture, dripped dry before coating with breadcrumbs, placed in parchment lined pan, baked in preheat 400°F oven 20 minutes. Oh the taste, sorta like Newburg!
