CRUSTLESS QUICHE 
1 sm. onion, chopped
1/2 c. broccoli florets, chopped
1 med. zucchini, peeled & sliced
8 mushrooms, sliced
2 tbsp. vegetable oil
1/8 c. grated Parmesan cheese
1 1/2 c. grated Swiss cheese
2 eggs
1/2 c. milk
1 tbsp. flour
Dash garlic powder
Salt & pepper to taste

Heat oil in a frying pan over low heat. Add the vegetables, cook until soft, stirring often. Remove from heat. Preheat oven to 350 degrees.

In a medium sized mixing bowl beat the eggs with a fork. Add the milk, flour, cheeses, garlic powder, salt and pepper. Mix well. Add the vegetables to egg mixture and stir to combine. Pour into a greased 9 inch pie plate. Bake 30-35 minutes. Cut and serve.
