CRUSTLESS SALMON QUICHE 
1 (15 1/2 oz.) can salmon, drained and flaked
1 c. shredded Swiss cheese
1/2 c. chopped onion
2 tbsp. all-purpose flour
4 eggs
1 c. milk
3/4 tsp. salt
1/8 tsp. pepper

Toss salmon, cheese, and onion with flour. Spread in greased 9 inch pie plate. Beat eggs slightly; beat in remaining ingredients. Pour egg mixture over salmon mixture. Bake, uncovered, in 350 degree oven until knife inserted in center comes out clean, 35 to 40 minutes. Let stand 10 minutes before cutting.
