CRUSTLESS QUICHE 
3 c. thinly sliced zucchini
1 c. Bisquick
1/2 c. chopped onions
1/2 c. grated Monterey Jack and/or Cheddar cheese
2 tbsp. parsley
1/2 tsp. salt
1/2 tsp. oregano
Dash of pepper
1 clove garlic, finely chopped
1/2 c. oil
4 eggs, slightly beaten

Put first 9 ingredients into deep pie plate and stir until mixed. Add beaten eggs, mix again. Pour oil over all, DO NOT mix. Bake at 350 degrees for 35-40 minutes.
