GIANT RHUBARB MUFFINS 
1 egg
1/4 c. vegetable oil
1/2 c. sugar
1/2 tsp. salt
2 tbsp. additional sugar
1/2 c. milk
1 1/2 c. flour
2 tsp. baking powder
1 c. cut up rhubarb

Stir together rhubarb and 2 tablespoon sugar and set aside. Spray large muffin cups with vegetable oil cooking spray. Beat egg, stir in milk and oil. Combine dry ingredients in a separate bowl. Add rhubarb/sugar mix to dry ingredients. Add liquid mixture, stir just until moistened. Do not over mix. Fill large muffin cups 2/3 full. Sprinkle with sugar. Bake at 400 degrees for 25 to 30 minutes. Loosen immediately with spatula.
