CRUSTLESS QUICHE 
9 to 10 slices bacon cooked and crumbled or 3 slices ham, cooked and cubed
1 c. shredded Swiss, Cheddar, or Mozzarella (can combine cheeses)
1/4 c. minced onion
4 eggs
1 c. evaporated milk (or regular milk)
1/4 tsp. salt (optional)
1/4 tsp. sugar (optional)
1/8 tsp. pepper

Sprinkle meat, cheese, and onion in a 9 inch glass pie plate. Beat eggs, milk and seasonings in large mixing bowl with a rotary beater, until well blended. Pour over meat mixture. Microwave on 80% power for 9 1/2 to 11 minutes. Turn the dish halfway through cooking time. Yield: 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I just fixed this tonight. It was yummy! I used ham. I had to cook it slightly longer than 11 minutes (but I'm also a little wacky about making sure food is really done). My kids loved it, too. It's definitely a "keeper"!

This was great! I cooked it for 11 minutes, but it was a bit watery on the bottom. Does anyone know if this means I cooked it too long or not enough?
