CRUSTLESS SPINACH QUICHE 
1 tbsp. vegetable oil
1 lg. chopped onion
1 (10 oz.) pkg. frozen spinach (thawed & squeezed)
1/4 lb. bacon, fried & drained
6 eggs
3/4 lb. Muenster cheese, grated
Salt & freshly ground pepper

Preheat oven to 350 degrees. Butter 9 inch pie plate. Saute onion. Add spinach, cook until moisture is evaporated.

Beat eggs. Add cheese. Stir into onion and spinach mixture and season. Put in pie plate, spread evenly. Sprinkle bacon on top. Bake until top is nicely browned and tester comes out clean. 40-45 minutes. 6-8 pieces.
