CRUSTLESS SPINACH QUICHE 
10 oz. pkg. frozen chopped spinach
Pam spray
4 whole eggs
8 egg whites
1 1/2 c. skim milk
2 tbsp. cornstarch
6 oz. Weight Watchers natural cheddar flavor cheese, shredded
1/4 tsp. Mrs. Dash salt free table spice
1/4 tsp. pepper

Preheat oven to 350 degrees. Spray 10 inch pie plate with Pam spray. Shred cheese and set aside. Microwave spinach (with no added water) until thawed and separated. Press spinach with fork in colander to remove excess moisture. In food processor or large blender, blend 4 whole eggs and whites until foamy. Add milk, cornstarch and spices. Pulse blend to mix. Add drained spinach. Pulse blend to mix. Pour mixture into 10 inch pie plate. Swirl shredded cheese through mixture with a fork. Bake for 45 minutes or until golden brown. Serves 4 - 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
