CRUSTLESS SPINACH QUICHE 
1 tbsp. olive oil
1 med. onion, chopped
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
5 eggs
12 oz. Muenster cheese, shredded
1/8 tsp. cinnamon

Heat oil in skillet; saute onion until soft. Add spinach and cook until excess moisture is evaporated; cool. Beat eggs in large bowl; add cheese and cinnamon. Stir in spinach mixture. Turn into greased 9 inch pie pan. Bake at 350 degrees about 45 minutes or until nicely browned. Serves 6.
