THE BEST FRUIT COCKTAIL CAKE 
2 cups all-purpose flour
1-1/2 cups sugar
1 tsp. baking soda
2 eggs
1 tsp. salt
1 (15 oz.) can fruit cocktail (not drained)

Mix together all of the above ingredients. Beat for 2 minutes. Pour into a greased 9x12-inch glass baking dish.

TOPPING:

1/2 cup light brown sugar
1/2 cup chopped walnuts or pecans

BEFORE baking, combine sugar and chopped nuts. I actually use up to 1 cup of each. Put on top of the cake and bake. at 350°F for 35 to 40 minutes or until cake tests done.

FROSTING:

1/4 cup sugar
1 (5 oz.) can evaporated milk (I use Pet)
1 (6 to 8 oz.) pkg. coconut flakes
1/2 cup (1 stick) butter
1 tsp. vanilla

In saucepan, boil all for 2 minutes. Pour over the HOT cake.
