FRUIT COCKTAIL CAKE 
2 cups sugar
2 cups flour (plain)
Pinch salt
2 tsp. baking soda
2 eggs
16 oz. can fruit cocktail

Preheat oven to 350°F.

Grease and flour a Bundt or loaf pan. Sift dry ingredients together. Add eggs and entire can of fruit cocktail. Mix together.

Bake for 30 minutes. While cake is cooking, boil icing.

FRUIT COCKTAIL CAKE ICING:

1 stick butter
1 cup sugar
1 cup evaporated milk
1/2 cup coconut
1/2 cup nuts
1 tsp. vanilla

Combine first 3 ingredients and boil slowly for 10 minutes. Remove from heat and add last 3 ingredients. Pour over cake while hot.

I don't make frosting but add coconut and brown sugar and sprinkle it on top before baking. :=))))

I did the same thing, no icing, just sprinkled brown sugar on top of the batter before baking, and it turned out very good, more like a cobbler. I actually made half the recipe, and it took maybe 40 minutes to be done in an 8x8 square pan and was almost crispy and caramel-like. I used some cool whip on top. I would do it this way again for sure.

Great recipe. Needed a little more time to bake, more like 40 minutes. I also leave out the nuts from the icing, and used more coconut, but the finished product gave me and my husband happy mouth. The cake is moist and full of flavor. I'll make this again someday. Thank you for posting it!
