FRUIT COCKTAIL CAKE | |
2 cups sugar 2 cups flour (plain) Pinch salt 2 tsp. baking soda 2 eggs 16 oz. can fruit cocktail Preheat oven to 350°F. Grease and flour a Bundt or loaf pan. Sift dry ingredients together. Add eggs and entire can of fruit cocktail. Mix together. Bake for 30 minutes. While cake is cooking, boil icing. FRUIT COCKTAIL CAKE ICING: 1 stick butter 1 cup sugar 1 cup evaporated milk 1/2 cup coconut 1/2 cup nuts 1 tsp. vanilla Combine first 3 ingredients and boil slowly for 10 minutes. Remove from heat and add last 3 ingredients. Pour over cake while hot. |
