ROAST CHICKEN 
1 (4 or 5 lb.) roasting chicken
2 tbsp. butter
Salt, pepper, oregano
5 or 6 peeled potatoes
1/2 a lemon
2 tbsp. oil
2 c. water

Wash chicken thoroughly and dry. Rub entire surface with lemon, butter, oil and seasonings. Place chicken in roasting pan and add water. Cut potatoes in quarters and place around chicken. Cover pan and roast at 350 for 1 to 1 1/2 hours. Baste a few times.

Instead of a roasting pan, I cooked all day on low in a crock pot. This came out delicious!! My whole family commented how tender the chicken was and what a wonderful flavor. Thanks for a great recipe!!
