ROAST LEMON CHICKEN 
5 1/2 lb. roasting chicken
1 tsp. salt
1/8 tsp. black pepper
1/4 tsp. thyme
2 lemons

Preheat oven to 350 degrees. Sprinkle cavity of cleaned chicken with salt, pepper and thyme. Pierce lemons about twenty times each and stuff into cavity. Place breast side down and roast one hour. Turn roast breast side up and roast 30 minutes more. Turn temperature up to 400 degrees and roast 20 minutes.

Alternate microwave recipe: Turn chicken breast side down in glass baking dish. Microwave on High for 30 minutes. Turn chicken breast side up. Microwave on High for another 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I absolutely loved how my chicken came out. I did tweak this recipe a little. Instead of 2 lemons, I used 1 lime and 1 lemon and used an onion (quartered) to stuff in the cavity. I also cut slits in the chicken and put minced fresh garlic in them. Amazingly good!
