NO-BAKE CHOCOLATE PEANUT BUTTER
COOKIES
 
1/2 c. butter
2 c. sugar
1/2 c. milk
1/4 c. cocoa
1 c. peanut butter
3 c. minute oats
1 tsp. vanilla

Place shortening, sugar, milk, and cocoa in saucepan. Bring to a rolling boil. Boil for 1 minute. Remove from heat and stir in peanut butter, oats, and vanilla until thick. Drop by teaspoonful onto waxed paper. They harden as they cool. Makes about 40-50.

I tried this recipe today, and it tastes great! My only question is, the cookies never really firmed up even after several hour cooling in the fridge. Any suggestions?

Ben, mine didn't either, I had only used 1/2 cup peanut butter though. I went and looked through lots of the recipes. I noticed that I still had the heat on when I was adding the peanut butter, it says to take it off, then add it. If you try it again let me know how it works. Thanks :-)

To Ben Washington, I presume you mean state. The cookies stay soft if it's foggy, cloudy or raining like with fudge!

Based off the two comments about cookies not setting up, I added an extra 1/2 cup of oatmeal to thicken them up! Also made sure I brought sug/cocoa/butter to a rapid boil and mixed in separate bowl with oatmeal... worked perfect! I also used crunchy peanut butter instead... way better... it added the perfect little crunch!

I, too, had the problem of the cookies not setting up. After some research and testing, I found that using a candy thermometer, instead of relying on the 1-minute boil, was effective. Bring the saucepan mixture to about 220°F before removing it from the heat. This will give you a firm, nearly crumbly cookie. For a little softer cookie, try 200°F, or so.

These cookies are great! The secret of having them set up is to only start the 1 minute timer when the mixture is at a FULL boil... a boil that cannot be stirred down. Take off the heat and quickly stir in the peanut butter and vanilla. Last is the oats.

I always boil mine about 1 1/2 minutes. I've found that if I boil it longer, it gets very crumbly & it doesn't set in nice cookies. If I don't boil it long enough, it doesn't set up. Yes, it's an easy recipe, but you have to pay attention... oh, and if the weather is rainy, I don't make them at all!
