Muffins and Loaf Breads: Never beat muffin batter; mix it only until dry ingredients and liquid are blended. The mixture may look rough and lumpy, but baking will fix that. Grease muffin tins only on the bottom - not on the sides. Batter will then cling to the sides while baking, and better volume will result. 2 bananas, crushed 2 cups white flour 1/2 cup shortening 2 eggs 1 tsp. baking soda 1 cup sugar 1 tsp. salt Cream together shortening and sugar. Add egg and beat well, add crushed bananas, nut meats, flour sifted with soda and salt. Add nuts, mix and pour in greased loaf pan. Bake. Variation: 1/4 cup nut meats Time, Temp and Yield: 45 min.; 350°F; 1-2 lb. loaf |
