RHUBARB CREAM CAKE 
1 yellow or white cake mix
3-4 c. diced rhubarb
1 c. white or 3/4 c. brown sugar
1 tsp. cinnamon
1 pt. whipping cream

Mix cake as directed on box. (Do not use a mix with pudding in it.) Pour into greased and floured 9"x13" pan. Top with the rhubarb, sprinkle with sugar and cinnamon. Pour the whipping cream over the whole thing and bake. Bake at 350 degrees for 45 minutes.

My husband says this is the best thing I have ever done with Rhubarb! Delicious and almost melts in your mouth. I have found how to cut a cake mix in half, and next time will bake an 8x8 for the two of us. We had it four nights in a row for dessert!!
