RHUBARB CAKE AND CREAM 
1 box yellow cake mix
4 cups rhubarb, chopped
1 cup sugar
1 small carton (1/2 pint) whipping cream

Mix yellow cake mix according to directions and pour into 9x13-inch pan. Sprinkle rhubarb and sugar over cake batter. Pour whipping cream over rhubarb.

Bake at 350°F for 45 minutes.

Remove from oven and invert onto a cookie sheet covered with aluminum foil.

I have been making it for years and it is delicious. In early spring when the rhubarb should not be over picked, I substituted 2 cups of sliced strawberries with 2 cups of rhubarb and made it the same way. It was delicious.
