PORK TENDERLOIN MARINADE
You'll never cook pork any other way once you try this! People beg me to cook this!

1 cup soy sauce
6 tbsp. sugar
1/2 minced onion (about 4 tbsp.)
4 crushed garlic cloves (or 4 tsp. minced garlic)
2 tsp. ginger
4 tbsp. oil

Use boneless pork tenderloin. Mix ingredients and set meat in marinade for 6 to 48 hours - usually one day ahead. Keep turning so entire roast is soaked with marinade.

Bake at 350°F for time appropriate to size. Peel potatoes and place around pork. Pour marinade over potatoes and turn once while cooking. Also baste meat while cooking.

 Susie Q (Oklahoma) says:
Made this tonight for friends and it got rave reviews. I only marinated it for 6 hours but poked the tenderloin with skewers so the marinade would soak in. It was absolutely divine - and so easy!!

This was very salty. It would have been much better if the soy were lower sodium.

This was very good. Maybe a little salty though I used low sodium soy sauce. Probably used honey instead of sugar and less than called for.

1st, I halved the recipe, having just a lb. of PTL. Then, my husband wanted "teriyaki (Yikes) So I added Hoisen, fish sauce and used honey instead of sugar. After marinading 24 hours I wrapped the PTL in Bacon like a mummy. Baked over peppers onions carrots with some marinade over top covered for 30 min then uncovered 15 min more to 145F. Let rest 10 min before slicing. Mighty fine teriyaki :) Now he wants peppercorn crusted PTL! (Yikes)
