CHOCOLATE PEANUT-BUTTER NO-BAKE COOKIES | |
This recipe can also be made without the peanut-butter for chocolate no-bake cookies, or without the cocoa for peanut-butter no-bake cookies. You can also add extra peanut butter for the PB lovers out there! 2 cups sugar 1/2 cup (1 stick) butter 1/2 cup evaporated milk (or regular milk or mix in half & half) 2 1/2 tbsp. cocoa 1 tsp. vanilla 1/2 cup peanut-butter (creamy or crunchy; whichever you prefer) 3 cups old-fashioned oats (if you use quick oats be sure to drop the boil time) OPTIONAL ADD-INS: 1/2 cup chopped nuts 1/2 cup dried fruit 1/2 cup chocolate morsels (white, milk, or dark) 1/3 to 1/2 cup coconut flakes In a medium saucepan combine sugar, butter, milk, and cocoa. Cook over medium heat and bring to a boil, let it boil for 3 to 5 minutes (or 1 to 2 minutes for quick oats), stirring constantly. Remove from heat and add peanut-butter and vanilla mixing until the peanut-butter is melted, lastly add the oats and mix together. Spoon out onto wax paper to sit. Should harden in 10 to 15 minutes. You can add extra ingredients to taste, just mix together with the sugar, butter, milk and cocoa. Enjoy! Submitted by: Hattie |
