BANANA BREAD | |
![]() 3 very ripe bananas 1 1/2 cups sugar 1/2 cup butter flavored Crisco 2 whole eggs 4 tablespoons buttermilk, yogurt or sour cream 1/4-1/2 tsp. salt 1 tsp. vanilla 1 3/4 cups sifted flour 1 tsp. baking soda 1/4 tsp. baking powder 1 cup coarsely chopped/broken pecans or walnuts Preheat oven to 350°F for 15 minutes before baking. In the bowl of a stand mixer, beat the bananas with the sugar until soft. Add softened (not melted) butter or Crisco and eggs, buttermilk or yogurt, salt and vanilla. Beat for 5 minutes. Mixture will not be smooth, but that is expected. Combine flour, baking soda, baking powder. Reduce mixer speed to low and gradually add flour; stir in nuts. Once flour has been added, do not mix for more than 1 minute, or just until flour is incorporated. To make muffins: Bake muffins in greased muffin cups (regular size) for 20 minutes or until a toothpick inserted in center of a muffin comes out clean. Makes 24. To make banana loaf: Bake in a greased and lightly floured loaf pan for 45-60 minutes, or until a toothpick inserted in center comes out clean. Makes 1 large loaf. If you have any extra batter, thin it with milk to make banana pancakes! Brush top of muffins or loaf with melted butter and drizzle with confectioners icing. To make confectioners icing, combine 1/4 cup confectioners sugar with a few drops of vanilla or rum and add enough water or milk (just a few drops) to make it a consistency that can be poured over the top of the bread or muffins. For extra flavor, a 1/2 teaspoon of vanilla bean paste may be added, or 1/2 teaspoon of banana extract. If you use yogurt, use banana or vanilla flavored yogurt. For the best banana bread/cake, use cake flour for this recipe, but all purpose flour may be used with great results. When substituting cake flour for all purpose, use 2 cups cake flour and add 1 extra egg. Do not use bread flour or self-rising flour in this recipe. This batter may be prepared entirely in a food processor (beat the eggs lightly with a fork before adding). Add all ingredients except flour and nuts; process until smooth; add whole nuts, pulse for 10 seconds, then add flour last and pulse only til combined. Proceed as above with baking.
