FLOUNDER WITH SCALLOP STUFFING 
2 tbsp. butter
1 sm. onion, chopped
1 clove garlic, minced
1 tbsp. fresh lemon juice
1/4 lb. bay scallops
1 c. seasoned bread crumbs
6 slices of flounder or sole, approximately 1 pound
Butter
Salt
Pepper
Paprika

1. Saute onion, garlic in 2 tablespoons butter until tender.

2. Cut bay scallops into small pieces and saute in onion garlic mixture for 3 minutes or until bay scallops turn opaque.

3. Remove form heat, add lemon juice, then bread crumbs. Mix. Mixture should be moist, if not, melt some butter and add to mixture to moisten.

4. Season flounder and salt and pepper. Put a spoonful of seafood stuffing in center and fold flounder over stuffing. Put seam side down in greased casserole dish. Sprinkle with salt, pepper, lightly with bread crumbs and paprika. Dot with butter and bake covered at 400 degrees for 20 minutes. Fish is done when meat looks opaque white and flakes easily.
