BREAKFAST CASSEROLE | |
1 lb. bulk sausage 3 to 4 baked potatoes (bake night before then refrigerate) 2 cans chopped green chile cheese (your choice Cheddar, Monterey, Jack) salt and pepper to taste 1 dozen eggs 1 cup dairy sour cream Brown sausage in pan big enough to hold sausage and potatoes. When brown, add in the peeled and diced potatoes. Cook through until hot. Layer in bottom of greased 13x9-inch pan. Layer green chiles and cheese. Sprinkle salt and pepper to taste. Spread grated cheese over the top. Mix the eggs and sour cream with mixer and pour mixture. Bake at 350°F until center is firm. Takes about 35 to 45 minutes. Serve with salsa. May substitute ham. May substitute Tater Tots or frozen hash browns for baked potato. |

I did want it to be a little lower in fat. I used 12 oz turkey sausage, 6 eggs and 1 1/2 cups egg beaters. I also used light sour cream.
