THE SLEEPOVER REPICEE
Isn’t Repicee spelled wrong? My son and I surprised my daughter and her friends with this breakfast casserole the morning after their sleepover and they all loved it. When they asked what it was called I explained that my son and I just winged it and we all had fun naming the dish while we shared breakfast together. The final and best choice by the girls was The Sleepover Repicee (we were being so silly that the mispronounced recipe stuck and that is how this breakfast casserole got it‘s name).

2 slices bread, cubed
40 tater tots, cut in half
1 tbsp. butter, cubed
1/2 lb. bacon (or meat of your choice)
1/2 cup grated sharp cheddar cheese
1/2 cup grated Mozzarella cheese
1/2 cup grated Romano cheese
6 eggs
2 cups milk
1/2 tsp. dry mustard (optional)
salt and pepper, to taste
paprika, for sprinkling

Grease an 8x8-inch casserole dish. Make two layers of your bread, potato and cheese ingredients. Place half of the cubed bread in casserole dish as well as half of the cut up tater tots. Place half of the cubed butter on top of the bread and tater tots.

Brown and drain your bacon or sausage, then crumble half into your casserole. Sprinkle each of your cheeses and repeat to make your second layer, Beat eggs with milk, dry mustard (if desired) and seasonings. Pour over the mixture in casserole. Sprinkle a bit more cheese of your choice on top and decorate with paprika.

Bake for 30 minutes at 375°F covered. Uncover and sprinkle more cheese if desired then continue to cook for 15 additional minutes. Best when prepared the evening before, cover and refrigerate.

Serves 4 to 6.
