CUISINART BANANA BREAD 
2 c. unbleached flour
1 tsp. baking soda
1 tsp. double acting baking powder
1/2 tsp. salt
1/2 c. walnuts pieces
2 lg. ripe bananas
1 c. sugar
3 lg. eggs
1 stick unsalted butter
1/2 c. buttermilk
2 tsp. vanilla

Preheat the oven to 350 degrees. Using the metal blade, put the flour, baking soda, baking powder, salt and nuts in the work bowl. Process for 10 seconds, or until the nuts are coarsely chopped. Remove the mixture and reserve it. Process the bananas for 1 minute or until they are pureed. Add the sugar and eggs and process the mixture for 1 minute. Add the butter and process for 1 minute. With the machine running, pour the buttermilk and vanilla through the feed tube. Blend in the reserved nut mixture by turning the machine on and off 3 to 5 times, or until the flour just disappears.

Do not over process the batter. Pour the batter into a buttered and floured loaf pan and bake for 1 hour until the bread is brown and a cake tester comes out clean. Cool on a wire rack.

Hi Mary,

Check your oven temperature with an oven thermometer. If the temperature is too low, the outside can develop a crust before the inside has had a chance to set and the cake can fall.

Once a cake falls, it won't bake. Other reasons a cake can fall is if you open the oven before it begins to set or jar the oven shelf and shake/move the cake too soon. Also, don't overmix. It's also possible (but not as likely) that your flour was too old.
