“EASY CHICKEN ENCHILADAS” IS IN:

EASY CHICKEN ENCHILADAS 
1 (8 oz.) pkg. cream cheese, softened
1 small tub dairy sour cream
1 large jar of medium to hot salsa
4 chicken breasts
10-12 corn or flour tortillas
1 pkg. taco cheese

Season chicken breasts to taste and grill or you can just boil them until no longer pink.

Cut cream cheese brick into cubes.

Cut cooked chicken into bite sized pieces and add to cream cheese. Stir until melted, then stir in 1/2 of jar of salsa.

Warm tortillas in microwave until softened.

Add a heaping tablespoon of chicken mix to tortilla and roll up. Place seam side down in a greased 9x13-inch pan.

After all of chicken mix is used, mix sour cream and the rest of the salsa together in a separate bowl. Spread over the enchiladas. Cover with cheese and bake until cheese is melted and golden brown.

Enjoy!

Serves 4 to 6.

Really yummy! Great enchilada recipe, super easy and better than premade mixes.
The filling is really creamy so adding vegetables like bell peppers is a good idea too :)

I love recipes that are simple and taste wonderful~ This one is excellent, easy, and very tasty!! For a side I simply heated left over white rise that I had added to it 1/2 can of black beans and abt. 1/4 cup of mild salsa. This was easy and tasty too!! So I followed the basic instructions for this meal using about 2.5 lbs of chicken heavily seasoned with poultry and garlic seasoning, gently simmered then drained broken apart and sauteed in a whole pkg of cream cheese salsa sour cream. This filled about 18 little taquito's made in extra thin corn tortillas and layered a 9x13 baking dish about 2x. I was careful to keep enough filling reserved so that I could use it to make enough sauce. I used this reserve with some more cream cheese, sour cream and salsa and had enough to make them nice and saturated and the bit of meat in the sauce was nice too! I covered it with a mix of cheddar cheese shreds and taco mix cause they were both leftovers and set the dish in the oven at 350°F for around 10 min and it was bubbly and starting to get just a hint of golden color. I would say this made ENOUGH FOR 8-10 PEOPLE!!! It was a lot of food TOO MUCH FOR A DINNER FOR FOUR but they were great! Everyone loved this meal and the rest will be consumed quickly. I served this with Spanish rice made with sauteed onions and garlic, browned rice, chicken stock with one cup "about half a can" fire roasted tomatoes to replace one cup of liquid, pan heated canned refried with the leftover cup of fire roasted tomatoes and some chipotle seasoning. Very good! Homemade guacamole made with juice of 3/4 of a lime, an avocado and some salsa quickly food processed, some sanitas corn chips and Corona's. PERFECT CINCO DE MAYO DINNER

LOVE this recipe! So easy and SO tasty! Next I make this I plan on making more sauce to pour over the enchiladas, and they are great w/chopped up lettuce and onion on top!

Added sliced Jalapenos's on top of the cheese, very tasty. Next time I would add corn, and some black beans for variety. Thanks for sharing, a new favorite and froze the left overs for another great meal.
