CHILI CHEESE BREAKFAST BURRITOS 
Breakfast Chili:

1 lb. ground pork breakfast sausage
1 onion, finely chopped
1 (15 oz.) can crushed tomatoes
2 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper

In a large pot, brown sausage over medium-high heat. Drain excess fat if desired. Add onion and cook until softened. Add chili powder, garlic powder, salt and pepper and stir into the meat. Add crushed tomatoes. Stir and bring to a boil. Reduce heat and simmer about 30 minutes until slightly thickened.

Melt butter in a large skillet. Crack eggs into a large bowl and season with salt and pepper to taste. Add milk and and whisk. Pour into skillet and scramble until cooked through. Remove from heat and set aside.

Burritos:

10 large flour tortillas
1 1/2 cups shredded cheddar cheese
10 eggs
1/4 cup milk
2 tbsp. butter
salt and pepper
dairy sour cream, optional

Heat tortillas in the microwave until warm and soft, about thirty seconds.

Fill each tortilla with equal amounts of chili, eggs, cheese, and sour cream (if desired). Roll or fold into burritos and serve immediately. If desired, grill burritos in a pan until golden brown on each side, about 2 minutes. This adds great flavor and texture to the tortilla, and will also further melt the cheese.

Once assembled, these burritos freeze well and reheat easily in the microwave or oven.
