“VELVET CUSTARD PIE” IS IN:

VELVET CUSTARD PIE 
4 slightly beaten eggs
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 1/2 cups milk, scalded
1 9-inch unbaked pastry shell

Preheat oven to 475°F.

Combine eggs, sugar, salt, and vanilla. Slowly stir in hot milk. While hot, pour into unbaked pastry shell. (To avoid spills, fill at oven.) Sprinkle freshly grated nutmeg on top.

Bake in preheated oven for 5 minutes, reduce heat to 425°F and bake 15 minutes longer, or until a knife inserted at center comes out clean. Cool on a wire rack.
