VEAL SORRENTINO 
3 pieces of veal scallopini
Eggplant
Prosciutto
Sherry
White wine
Flour
Mozzarella
Butter

Heat frying pan and add 1 tablespoon of cooking oil. Take veal and flour lightly. Place veal in pan and brown lightly; discard oil. Add 2 oz. sherry wine, 2 oz. chicken stock, 2 tablespoons of butter and reduce sauce. While reducing sauce, top veal with a thin slice of eggplant, Prosciutto and Mozzarella.
