MICROWAVE RHUBARB STRAWBERRY
CRISP
 
1 lb. rhubarb (3 c.), cut in 1/2" slices
3 c. strawberries, quartered
1/3 c. sugar
1 tbsp. flour
3/4 c. quick cooking oats
1/2 c. flour
1/2 c. brown sugar
1/4 c. butter
1/4 tsp. cinnamon
Ice cream

Combine first 4 ingredients in 8 x 8 inch glass baking dish. Combine next 5 ingredients. Sprinkle over fruit. Microwave on high until rhubarb is tender, and crisp is bubbly throughout (12-14 minutes) rotating dish once. Let stand 10 minutes. Serve with ice cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I had the stuff in the freezer for this and wanted to make a crisp wow turned out great I didn't really even measure the rhubarb or strawberries and it turned out soo yummy.

I made this tonight with a few alterations and it turned out tasty, and not overly sweet like many restaurant and bakeshop varieties. I added a small amount (1 tbsp) of vanilla and 1.5 tbsp of cornstarch (to thicken). Also I cooked this in a shallow 12 x 6 inch dish so I doubled the crumble for the top (I didn't have quick cooking oats, so I used regular oats which worked fine). Lastly, I did not cook this in a microwave, but in the oven at 350°F for about 50 minutes (covering with foil when the top turned golden).

It is a great recipe because it's fairly low in sugar (for a crisp) yet it's sweet enough to counteract the rhubarb. My strawberries were sweet and ripe so that probably helped, but I enjoyed the balance in flavor. I will make this again. Thank you!

Excellent quick and easy recipe that tastes great. I used a little less sugar, but I like my rhubarb and gooseberry crisp extra tart. Gonna try it will rhubarb and gooseberries in a bit. I'll post if it works out.

Great, Thank you! I have rhubarb and I have the strawberries now. I just need the quick cooking oats which I can pick up Monday. I don't have to rotate my dish as the microwave I have the turntable goes around on it as soon as you push start :) Thank you for posting it! Have one for regular rhubarb crisp but wondered if I could do one with strawberries. I can do it Monday when I come home with the oats. Will leave one with 5 stars if it turns out and I imagine it will!!!

I did this one this morning and had to have a piece of it with the canned whipped topping on it for my dessert at supper time as I had no ice cream. It was soo good! After I had it I had to go out and buy some vanilla ice cream to have with it tomorrow night. This would be the only one I will be able to make for this year as it is with Canadian strawberries and rhubarb!!! Will definitely be making this one again more often next year. Instead of butter I used 1/4 cup of margarine instead of butter and yellow sugar instead of brown. I also didn't cook it as long as my microwave is a higher wattage and it has the turntable that goes around when it starts up.
