SWISS PIE | |
1 cup finely crushed crackers 4 tbsp. (1/2 stick) butter, melted 6 slices bacon, cooked, drained and crumbled 2 tbsp. bacon drippings 1 cup chopped onion 8 oz. natural Swiss cheese, shredded (2 cups) 2 slightly beaten eggs 3/4 cup dairy sour cream 1/2 tsp. salt dash pepper 2 oz. sharp process American cheese, shredded (1/2 cup) Preheat oven to 375°F. Combine cracker crumbs and melted butter. Press into bottom and sides of 8-inch pie plate. Cook bacon; drain and crumble. Pour off all but 2 tablespoons bacon drippings. Add chopped onion to drippings. Cook until tender. Add the bacon, onion, Swiss cheese, eggs, sour cream, salt and pepper. Pour into pie shell. Sprinkle top with American cheese. Bake at 375°F 25 to 30 minutes, until an inserted knife comes out clean. Let stand 5 to 10 minutes. Cut. Serves 4 to 6. |
