BANANA OATMEAL BREAD 
1/2 c. softened butter
3/4 c. light brown sugar, firmly packed
2 lg. eggs
1/4 c. milk
2 to 3 med. very ripe bananas, mashed
1 1/2 c. flour
1 tbsp. baking powder
1/3 c. old-fashioned oatmeal, uncooked

Heat oven to 375 degrees. Grease and flour bread pan. In large bowl, with electric mixer at medium speed, beat butter and sugar free of lumps. Add remaining ingredients (reserving 1 tablespoon oatmeal and brown sugar). Beat 1 to 2 minutes until batter is smooth. Spoon into bread pan. Sprinkle reserved oatmeal and brown sugar over top. Bake 45 to 50 minutes until toothpick inserted comes out clean. Cool at least 15 minutes before removing from pan.

These are delicious! I often use whole wheat flour, or half whole wheat half white and they are still great. Definitely go with 3 bananas, I usually double the recipe and use 6 bananas. They also make great muffins, bake about 18 minutes.
