MICROWAVE BANANA BREAD 
1 1/2.c flour
3/4 c. sugar
1/2 c. plus 2 tbsp. soft butter
1/3 c. milk
2 eggs
2 med. bananas, sliced or mashed
1 tbsp. lemon juice or vinegar
1 tsp. baking soda
1/2 tsp. salt
1/2 c. nuts (1/4 cup plus 1/4 cup)

Combine ingredients in order given, except for 1/4 cup nuts. Mix well. Lightly butter a microwave Bundt pan. Sprinkle with remaining nuts. Pour in batter. Cook for 7 to 9 minutes on full power or until done. Let stand 5 minutes before turning out of pan.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I made this but put in a glass loaf pan, microwaved 9 minutes at 50% power and then 5 more minutes at full power and it turned out great. Added a homemade frosting of powdered sugar with a little olive oil and milk.

Suggest try these alterations, which worked for me : 1 1/2 cups whole wheat flour, 1/2 cup olive oil, 1/3 cup soy milk, 2 eggs, 4 bananas, 1 tsp. baking soda, no salt, handful of Craisins and/or nuts, drizzle in 1 tbsp. molasses, moisten loaf pan with olive oil, 7 minutes in microwave.

Oh boy! I thought I had all the ingredients. I was short 1/2 cup flour so I used Bisquick as a quick replacement.

Then, I could not find lemon juice :) so I used Apple cider vinegar "the mother" I don't know...

Did anyone add vanilla?

I used coconut oil instead of butter, no lemon juice and 1/2 tsp. baking powder, but this cooked into a nice banana cake for me in an 8x8. Great recipe for microwave!

Used square (10 inch) glass casserole dish, used 3 bananas. 1 cup brown and 2 tbsp. white sugar, with a couple teaspoons cinnamon. Looks and tastes great! I also broiled both sides on a very lightly sprayed (veggie spray like Pam) piece of foil on a cookie sheet just long enough to lightly brown both sides after inverting. I cut out the 3" center piece as it was not as full blown as the rest. I'll eat that tonight! It's a good recipe, though I have made b-bread before, but not in the micro. I like it, my friends will love what I pass out to them! Next up: a beer, lol! Thanks! BTW, I got the bread to 180°F then let it sit in the micro. :)

I am living in a holiday cottage with only a two element electric stove and a microwave.So my cooking is limited two these two cookers.
I have tried a few microwave recipes, and your recipe is my favorite and a!so the kids' when they come to stay. The recipe is so straight forward and only requires one bowl for the mixing. I use Brazil but or Pecan nut ,'cos the kids don't like walnut flavour-too strong!

Just made it for the first time today. We had 2 over-ripe banana and looked up a recipe to cook banana bread in a microwave (our oven is currently broken). The bread came out extremely moist and delicious. We only added 1/3 a cup of sugar and it turned out perfectly.
