CAPE COD FISH FILLETS 
2 lbs. fresh cod fillets
1/8 tsp. white pepper
4 tbsp. butter
1 tsp. dry mustard
1/4 c. parsley, chopped
1/2 tsp. salt (opt.)
1 c. soft white bread, cubed
1/2 c. chopped onions
1 c. grated cheddar cheese

Season fish fillets with salt and pepper and place in greased baking pan. Melt butter and add onions. Cook until onions are soft (about 5 minutes). Remove from stove. Stir in mustard; then add bread cubes. Add cheese and parsley and toss gently. Spread topping over fish fillets in baking pan. Bake at 350 degrees for 30 minutes or until fish flakes easily when tested with a fork. Do not over cook. Garnish with parsley. Serves 4.
