PARMESAN BAKED PACIFIC COD 
3 tbsp. each flour & cornmeal
1/4 tsp. onion salt
1/8 tsp. pepper
2 tbsp. butter
2 lb. cod fillets
1/4 c. Parmesan cheese

Combine flour, cornmeal and seasonings. Melt butter in shallow pan. Coat cod in flour mixture; place in dish. Turn cod to coat with butter; sprinkle with cheese. Bake at 450 degrees for 8-10 minutes.

This was really good! I tried this for the first time tonight and was happy with the result. I did tweek it a little. Turning the large fillets that I had was hard and so I melted it in the micro and basted it over the fish. It would not brown lightly for me like I wanted it to, so I extended the cooking time for 4 min and then turned the broiler on for an additional 2-3 min until golden brown on top. It turned out lightly crisp. Will make this again! Thanks!

I'm an innovative person and have a hard time following a recipe to the T. The only things I changed a few things. I coated the cod with melted butter mixed with a little lemon juice and finely chopped garlic on both sides. Then I coated it in the flour mixture. I didn't have cornmeal so I used bread crumbs and mixed up the seasonings in it too! I added a few extra seasonings of my own. Sprinkled it with lots of grated parmesan and popped it in the oven. I baked it for 14 min. because one fillet was thicker than the other. It turned out excellent! It was perfectly crispy on the outside and juicy and tender on the inside.

This recipe is quick, easy and SOOO tasty! I used garlic salt instead of onion salt. I, too, basted the fish with butter instead of melting it in the pan and then cooked it a little longer. So awesome! I am making it for the second time tonight!

I made this last night and followed the directions to the T. I am one of those cooks that usually have to tweak every recipe. Not this time. Perfect fish. I did have to cook mine longer because my pieces were very thick. I cooked it about 15 minutes and until the tops were a pretty golden brown. I will use this recipe.
