CANNED SALSA 
1 qt. chopped tomatoes
1 green pepper, chopped
1 onion, chopped
2 cloves garlic, diced
2 tsp. chopped jalapeno peppers (or to desired hotness)
1/4 c. vinegar
1 tsp. salt
1 tsp. sugar
1 tsp. oregano
1 tsp. cayenne pepper (if desired)
1 tsp. cumin powder

Mix all ingredients together in heavy pot and simmer until thick, stirring frequently. Sample as often as you like! Process in pint jars in steam or hot water bath canner for 10 minutes. One batch makes about 1 1/2 pints after all the sampling! I would suggest making 6 to 10 batches in one pot for canning.
