TOMATO PIE 
1 tube refrigerator biscuits
4-6 tomatoes, ripe
3 slices bacon
1 med. onion, chopped
1/2 green pepper, chopped
1 c. grated mozzarella cheese
1/4-1/2 c. mayonnaise

Pat biscuits and flatten over bottom and sides of a 9 inch pie pan. Place tomatoes in boiling water for 1 minute. Remove and peel off skin. Slice tomatoes and put in pan after putting crust in 350 degree oven for 10-15 minutes. Fry bacon and crumble over pie.

Saute onion and green pepper in bacon grease. Sprinkle over pie. Mix mozzarella cheese and mayonnaise together and pat this over the pie with your hands. Bake at 350 degrees for 45 minutes or until cheese melts and cooked well. Serve hot. Yield: 6-8 servings.
