CHINESE PIE (CASSEROLE) 
1 lb. ground beef
8 oz. can kernel corn
8 oz. can cream corn
Mashed potatoes (fresh or instant)

Brown beef in pan, then drain grease. Put beef as a bottom layer in a casserole dish. Drain water from kernel corn, place this as the second layer on top of beef. Spread cream corn as third layer on top of kernel corn. Make mashed potatoes as normal (either fresh or instant) and cover the cream corn as the top layer. Cover dish and bake for 30 minutes on 350 degrees.

I'm a fairly accomplished home cook and typically do something that interests me out of Julia, Marcella Hazan, Nancy Silverton, Dorrie Greenspan etc. but this simple recipe is the one of my New England childhood and for most of my family one of the best things I can cook for them. It's simple, cheap, and requires almost no skills but it's a hit. Try it without the embellishments..you'll be surprised.

i just made this 2 days ago. all i added was a chopped onion to the hamburger while it browned and some shredded cheese on top of the potatoes for the last 10 minutes of cooking, just enough to melt it. it was Amazing ! i made a huge pan and it's almost all gone. i will def do this again. a total favorite and so easy !!
