WEIGHT WATCHERS CRANBERRY BANANA
BREAD MIX
 
1 1/2 c. flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1 c. fresh cranberries

1 1/2 very ripe mashed bananas
1/2 c. sugar
1 large egg (room temperature)
1 tsp. vanilla
1/2 c. oil

Bake at 35 minutes in spray coated 8" square pan. Cut in 16 servings.

I love this recipe. Printed it off in 2008, and have been making it ever since. It's easy to make, just a few ingredients. Quick to make. Don't let title scare you on taste or flavor. I replace the fresh cranberries and use Ocean Spray - craisins (original or orange). I have also made muffins with this too. About a 1/4 cup of mix into sprayed muffin pan.

This is one DELICIOUS bread. I can't be too far away from it! I add some chocolate chips, which makes the bread less weight-watchery but oh well..:) I also use an egg replacer and everything works great. I also love to add some coconut shreds. Do try this recipe!

I made this because it said Weight Watchers. My son came over. Saw a snack and raved about this bread. When told it was WW, he said he didn't care it was deelish!! I made it every week and sometimes I get a "I need banana cranberry bread STAT!" A family favorite although when input into WW etools it calculates to 27 points for the entire bread. Break it down into 16 pieces and I calculate it to be 2 Points Plus value.

This bread is wonderful. However, comment to Nancy's points calculations. I just put it into e tools and came up with 66 points plus for the entire recipe so cut into 9 pieces is 7 points, 12- 5.5 points and 16 - 4 points.

My comment was above about the pointsplus numbers. I modified this even more. Instead of the 1/2 cup of oil I used 1/2 cup applesauce and 1-2 tbsp. of oil. That brings the entire pan down to 37 points so cutting into nine pieces makes it 4 points each. I also added about 1/4 tsp of salt. It made a big difference.
