MARINATED ARTICHOKE HEART PASTA SAUCE | |
1 jar marinated artichoke hearts 1 tbsp. mayonnaise 1 tsp. lemon juice 1/4 tsp. garlic powder 1 tsp. capers (can omit if you don't like) 3 tbsp. grated Parmesan cheese salt and freshly ground pepper, to taste 1-2 tbsp. marinade liquid (depending on how loose you want the sauce) Remove the artichokes from the marinade and reserve the liquid. Roughly chop and add to a medium bowl. Add the remaining ingredients and stir well. Note: You can heat it gently in the microwave but I just top the hot pasta with the sauce so as not to curdle the mayonnaise. I also add more Parmesan cheese on top. Submitted by: Val O'Dell |
