BAKED CHICKEN BREAST AND TOMATO
SAUCE WITH ARTICHOKE HEARTS
 
4 whole chicken breasts sprinkled with garlic powder
2 lbs. stewed tomatoes, chopped, do not drain
2 (6 oz.) marinated artichoke hearts, chopped and drained
1 clove garlic, minced
1 tsp. sugar
1 tbsp. lemon juice
Pinch of red pepper to taste

Bake chicken breast 350°F. for 20 minutes or until done.

In a saucepan heat together remaining ingredients and simmer 10 minutes. Pour sauce over chicken and bake 5 more minutes. Serve on angel hair pasta.

Really good!! I changed it up a bit by adding all ingredients together at once and baked it for 45 minutes uncovered. I only had 3 large chicken breasts that I baked. I shredded the chicken after it was done and added back to sauce in pan (it was more than enough chicken for the 3 of us). Will make again!! Great in a bowl with the angel hair pasta!!!
