CRUNCH TOP BANANA LOAF 
2 c. rice cereal squares
3/4 c. chopped walnuts
2 tbsp. brown sugar
1 tbsp. butter, melted
1/2 c. butter
1 c. granulated sugar
1 egg
1 c. mashed ripe banana
1/2 c. buttermilk or sour milk
2 c. all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda

Crush cereal with rolling pin to make 1 cup crumbs. Combine 1/4 cup of cereal crumbs and 1/4 cup of the walnuts, the brown sugar and the 1 tablespoon melted butter; set aside.

Cream the 1/2 cup butter and the granulated sugar until fluffy. Add egg, banana, and buttermilk; mix well. Stir together flour, baking powder, and baking soda. Add to creamed mixture; mix well. Fold in remaining crumbs and nuts. Turn into greased 9"x5"x3" loaf pan. Sprinkle reserved crumb mixture atop. Bake in 350 degree oven for 55 to 60 minutes. Cool 10 minutes. Remove from pan; cool on rack. Makes 1 loaf.
