CHICKEN FRICASSEE - MICROWAVE 
2 tbsp. vegetable oil
1 lg. onion, thinly sliced
1 chicken cut into parts
1 1/2 tsp. salt
1/4 tsp. pepper
1 bay leaf
3 c. water
3 tbsp. butter
1/4 c. flour
1 tsp. paprika
1/2 c. milk
Dash of parsley

In large casserole dish heat oil on high 2 minutes. Add onion, heat 3 minutes. Add chicken, salt, pepper, bay leaf and water. Cook 10 minutes on high. Take chicken out of dish; drain stock, save 1 1/2 cups.

In a separate microwave large dish melt butter. Blend flour and paprika in butter. Stir milk and stock into butter mixture. Heat uncovered 4 minutes. Put chicken into sauce, cook on medium high 5-7 minutes. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This is the old Sharp Microwave Cookbook chicken fricassee recipe. It's shockingly good! You can also make it in a pressure cooker. Same ingredients, similar steps, only you cook the chicken in the liquid for about 10 minutes under pressure, remove and reserve the liquid, make the roux with the butter and flour, make the milk gravy, and then simply pour the gravy over your chicken and any sides.
