SCOTTISH SHORTBREAD COOKIES 
1 cup butter
2 cups pastry or all-purpose flour
1/2 cup sugar

Preheat oven to 300-325°F.

Beat together butter and sugar. Mix in flour by hand or with a wooden spoon until well mixed; mixture may be crumbly. Roll into walnut sized balls.

Flatten balls of dough with a fork or push a design onto the top (the bottom of a fancy glass or a cookie mold). Or form a disk shape and cut into wedges.

Arrange onto an ungreased cookie sheet.

Bake in preheated oven for 12-15 minutes or until edges are a light beige in color. Do not allow to brown.

Granted I am not the greatest chef/baker. This recipe is challenging. It is so dry when you press a fork into the ball often it just crumbles. Several cookie sheet-fuls spread. I used parchment,chilled the dough and finally added a bit of milk. The flavor is quite good just very hard to bake consistent cookies. I have baked a batch and a half and have forty similar sized cookies. Eleven of those were after the addition of a bit of milk. I would NOT recommend this recipe.

This is just a standard shortbread recipe which ONLY uses butter, sugar and flour. Works best with a good quality butter and no substitutions!
