OVEN - ROASTED POTATO FRIES 
3 lg. baking potatoes, scrubbed but not peeled
olive or vegetable oil
salt, pepper & paprika
seasonings, if desired

Heat oven to 400°F. Cut potatoes into half lengthwise. Cut each half into thirds lengthwise. Place in a large bowl and cover with cold water (add a 1/2 tsp. salt to water, if desired, but this is optional).

Cover and refrigerate for at least 2 hours or up to 24 hours. Remove from refrigerator and drain. Pat dry on paper towel.

Arrange in single layer in roasting pan. Drizzle with oil, sprinkle with salt, pepper and paprika. If you like, the potatoes can be seasoned with rosemary, garlic powder or onion powder (very lightly) as a variation.

Bake, turning once or twice, until tender and golden, about 30 minutes. Makes 4 servings.

They will turn brown and become dehydrated over time as the air hits them.

I believe what Shahla was asking -- What happens if you bake the potatoes without having soaked them in water first, i.e. cutting them raw and putting them in the oven immediately.

Did it by slicing the potatoes and shaking them with the olive oil and paprika in a plastic bag, then cooking them immediately in a 400°F oven for 30 minutes. No cold water required if you cook them right away, but you could prepare the potatoes ahead of time and hold them in cold water to prevent browning as CM suggests.
