“OVEN ROASTED RED POTATOES” IS IN:

OVEN ROASTED RED POTATOES 
2 lb. red potatoes, washed and cut into 1 inch cubes
1 tbsp. basil
1 tbsp. thyme
1/2 cup olive oil
1 cup Parmesan cheese
2 teaspoons seasoned salt
pepper, to taste

Preheat oven to 425°F.

Place potatoes in a casserole dish and drizzle with olive oil. Add spices to coat potatoes. Stir potatoes around.

Place half of the Parmesan cheese on the potatoes and place in the oven for 30 minutes.

Check potatoes, stir (add more olive oil if the potatoes are getting dry) and add remaining Parmesan cheese. Return to oven for 30 minutes or until they are roasted to the desired color and texture.

Let stand for 3 minutes and serve warm.

I just made this recipe and added 2 tbsp. melted butter with one tbsp. minced garlic. Drizzled it over the potatoes before the second round of Parmesan. Family raves. Thanks!

Make sure you don't dirty too many bowls. Put dem taters in the casherole disss. We sprinkled dat garlic powda after we stirred. Also, stick it at a 56 degree angle from the front of the oven. Great recipe!!! loved it. so delicious.

Really wanted to try this, but didn't have red potatoes. I tried white potatoes, and wasn't bad at all. Very good. Not disappointed. But I bet red would be better.
