CAROLINA OVEN ROASTED RED POTATOES | |
1 (3 lb.) bag red potatoes 1/2 cup olive oil 1/2 tsp. of each: Salt Black pepper Blackening seasoning Onion powder Garlic powder Hungarian Paprika Parmesan Dipping seasoning Preheat oven to 400°F. Preheat sheet pan 10 minutes. Cut potatoes into cubes. Do not peel. Soak in cold water for 15 minutes. Dry thoroughly. Pour in large bowl and cover with olive oil. Add 1/2 teaspoon of each seasoning. Mix and toss to coat. Spread potatoes on preheated sheet pan. Potatoes should sizzle when they hit the pan. Spread potatoes enough so they aren’t touching one another; otherwise, they will steam instead of roast. Roast at 400°F for 45 minutes, turning every 15 minutes. The key to this recipe is soaking, drying, and spreading out the potatoes. If you do this, they will crisp up nicely. Submitted by: Katherine Sawyer Bailey |
